4 – 4 oz. Mahi portions
3 Tablespoons Cajun Seasoning
1 stick of unsalted butter softened
4 – 6inch flour tortillas
1 fresh beefsteak tomato diced
½ fresh red onion diced
¼ cup fresh chopped cilantro
2 cups shredded ice berg lettuce
1 avocado diced
¼ cup sour cream
1 lemon


In a bowl, mix together the Cajun seasoning and butter
Pre heat oven to 400 and place mahi on a greased baking sheet
Coat the fish evenly with the Cajun butter and place in oven
In a separate bowl mash the fresh avocado and mix with sour cream and juice of 1 lemon
When fish is firm to touch and cooked through remove from oven and flake apart with a fork
Heat the tortillas slightly in the oven or in a hot pan
Spread the avocado cream over tortilla and then top
Evenly distribute the Mahi between the tortillas and top with fresh tomato, onion , lettuce and cilantro
Fold together and enjoy!
